<text>Response surface methodology was employed to characterize the effects of blanching temperature, blanching time and final frying time on texture and appearance of fried yam chips produced from two cultivars of white yam (Dioscorea rotundata). Fifteen treatment combinations were derived from Box–Behnken design (k = 3) and run. Analysis of variance and multiple linear regression analyses were conducted to determine the effects of factors on the texture and color indices and to fit models for predicting the response variables. There were differences in the effects of the same set of factor combinations on textural attributes (hardness, fracturability, cohesiveness, gumminess and chewiness) and color (L, a, b) indices of the two cultivars used. Blanching temperature and frying time had a greater impact on texture and appearance of fried chips than blanching time. Adequately fitted models were derived for …</text>

<text>This book provides a rigorous treatment of deterministic and random signals. It offers detailed information on topics including random signals, system modelling, and system analysis. System analysis in the frequency domain using Fourier transform and Laplace transform is explained with theory and numerical problems. The advanced techniques used for signal processing, especially for speech and image processing, are discussed. The properties of continuous time and discrete time signals are explained with a number of numerical problems. The physical significance of different properties is explained using real-life examples. To aid understanding, concept check questions, review questions, a summary of important concepts, and frequently asked questions are included. MATLAB programs, with output plots and simulation examples, are provided for each concept. Students can execute these simulations and verify the outputs.</text>

<text>In recent years, the fast-paced development of social information and networks has led to the explosive growth of data. A variety of big data have emerged, encouraging researchers to make business decisions by analyzing this data. However, many challenges remain, especially concerning data security and privacy. Big data security and privacy threats permeate every link of the big data industry chain, such as data production, collection, processing, and sharing, and the causes of risk are complex and interwoven. Blockchain technology has been highly praised and recognized for its decentralized infrastructure, anonymity, security, and other characteristics, and it will change the way we access and share information. In this book, the author demonstrates how blockchain technology can overcome some limitations in big data technology and can promote the development of big data while also helping to overcome security and privacy challenges. The author investigates research into and the application of blockchain technology in the field of big data and assesses the attendant advantages and challenges while discussing the possible future directions of the convergence of blockchain and big data. After mastering concepts and technologies introduced in this work, readers will be able to understand the technical evolution, similarities, and differences between blockchain and big data technology, allowing them to further apply it in their development and research. </text>

The peak maximum decreased significantly upon the addition more CBE due to the presence of the low-melting TAGs. However, the melting heat and the melting onset temperature were comparable to CB up to 25 g CBE/100 g blend. The iso-solid diagram showed monotectic behavior with softening effect proportional to CBE increase. A significant decrease in SFC was observed at all temperatures for the blends in which the CBE ratio was above 25 g/100 g blend. The second part of this study was set out to determine the performance of CBE replacement in chocolates and compounds at 20 °C. All the chocolates and compounds even in the level of 5 g CBE/100 g blend had significantly lower Casson yield stress than reference chocolate. However, the …</text>
