The blends were dried using a cabinet drier, milled into flour and spices added and processed into a snack food. Samples were analysed for moisture, fat acidity, water absorption and swelling capacity. The cylinder probe test cell was used in a TA-XT2 Texture Analyzer to measure the hardness of processed snack foods. Sensory analysis was conducted to determine the overall acceptability of the snack products. Fermentation and cowpea levels showed no significant effect (p< 0.05) on the moisture contents of the products. Cowpea addition caused decreases in the water absorption capacities from 192.23 to 117.15% in the unfermented nixtamalized sample whereas general increases were observed in the non-nixtamalized products. Similar observations were made for the swelling capacities of the products. No significant variations were observed in the fat acidity levels of the nixtamalized products with fermentation time and cowpea fortification. The texture (hardness) of the formulated products was acceptable. Sensory evaluation indicated that the presence of cowpea and fermentation in the products did not influence their acceptability by the panel. The study also used a 4 x 3 full factorial design with pod storage (0, 3, 7 and 10 d) and drying time (0, 3 and 7 d) being the principal factors investigated to study the changes occurring during the drying process. FI and cut test of the beans were studied during fermentation as well as the drying process. FI of the beans increased significantly with pod storage and fermentation but decreased slightly during drying. FI of the unfermented beans increased slightly from 0.674 for the unstored pods to 0.763 after 10 days of pod storage. The FI of the fermented beans (six days fermentation) also increased from 1.390 for the unstored pods to 1.424 for pods stored for 10 days. It decreased from 1.389 at the start of drying for the unstored pods to 1.105 for pods stored for 10 days at the end of drying (seven days). FI of all the beans were however, above 1.0 at the end of fermentation and drying for all pod storage treatments. Net profit earnings of the firm was used as the dependent variable for the study whilst the independent variables constituted some characteristic indicators that can affect the firm’s performance such as earnings per share, return on equity, return on assets, return on investments and overheads. Five listed companies namely; the Ghana Commercial Bank, Enterprise Insurance, Mechanical Lloyd, Aluworks Ghana Limited and Standard Chartered Bank were used for the study. A random model was used to test for the effects of the various variables on firm’s performance using a panel data. The results show that earning per share was significant and positive in explaining firm’s performance whilst return on investment and overheads were significant but negative in explaining firm’s performance. Return on assets and return on equity were however, insignificant in explaining firm’s performance. it is therefore recommended that firms trade on the stock exchange to attract more shareholders through their share pricing as this will enable them to increase their capital gain as well as the public patronizing not only in their shares but also being part of them and hence patronizing their products since they will have a stake in it. This study investigates the effects of temperature, humidity, precipitation, wind speed and the specific government policy intervention of partial lockdown on the new cases of COVID-19 infection in Ghana. Daily data on confirmed cases of COVID-19 from March 13, 2020 to April 21, 2020 were obtained from the official website of Our World in Data (OWID) dedicated to COVID-19 while satellite climate data for the same period was obtained from the official website of NASA's Prediction of Worldwide Energy Resources (POWER) project. Considering the nature of the data and the objectives of the study, a time series generalized linear model which allows for regressing on past observations of the response variable and covariates was used for model fitting. The results indicate significant effects of maximum temperature, relative humidity and precipitation in predicting new cases of the disease. Also, results of the intervention analysis indicate that the null hypothesis of no significant effect of the specific policy intervention of partial lockdown should be rejected (p-value=0.0164) at a 5\% level of significance. These findings provide useful insights for policymakers and the public.
